INGREDIENTS:

1 cup fresh broad beans

2 tsp lemon juice

1 tbsp fresh chopped mint

1 garlic clove, crushed

50g feta

2 tsp olive oil

Salt and pepper to season

METHOD:

- Remove broad beans from their pod and place in boiling water for 1-2 minutes. Drain and rinse, then place in a bowl of cold water.

- Remove the bean from its shell and set aside in a bowl.

- Place broad beans along with lemon juice, garlic, mint and feta into a stick mixer. Blitz slightly then add the oil and season to taste with salt and pepper. Continue to blend until smooth then serve immediately or place in the fridge to serve at a later time.
