1. Halve/butterfly prawns and clean thoroughly.
2. Heat a large frypan over high and add oil, butter and garlic.
3. Once the butter and garlic begin to golden, add prawns along with chilli flakes and tarragon to cook for 2-3 minutes.
Season with salt and pepper.
4. Place prawns onto a plate and drizzle over remaining butter in the pan.
5. Sprinkle over chives along with lime zest.
6. Serve with lime wedges
