A family-favourite, this banana bread is simple to whip up and can be enjoyed immediately, or packed into lunchboxes.

Our banana bread is quick and easy to make and provides a comforting warmth and familiar flavour that the whole family will love. And the best is - it will fill your home with an enticing aroma! 

Banana Bread Recipe

Ingredients :
serves 8-10
  • 270g soft light brown sugar
  • 2 bananas
  • 140g butter
  • 2 eggs
  • 280g white spelt flour
  • 1 tsp baking powder
  • 1 tsp bicarb soda
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
Method
  1. Preheat oven to 170ºC, grease and line a loaf tin.
  2. Add brown sugar and 2 eggs into a large bowl. Beat with an electric mixer to combine. 
  3. Slice and add bananas, use the mixer to mash and combine. 
  4. Stir in spelt flour, baking powder, bicarb soda & spices and beat until well mixed. 
  5. Melt 140g butter, add to bowl and beat to combine. 
  6. Pour batter into the prepared loaf tin (use a cake tin if you don’t have a loaf tin). 
  7. Bake on the bottom shelf for 50-60 minutes (check after 40 minutes!) or until the loaf is firm to touch and a skewer inserted in the centre comes out clean. 
  8. Allow to cool then slice to serve.
