This light and moist GF cake uses only a small handful of ingredients and is super quick to make! Get creative and add anything you like! A really great way to use up any leftover fruit or add some dark chocolate chips or nuts for a little twist. You can also transform this into a chocolate cake - simply add 1/4 cup of Cacao (Available in our Marketplace!)
Ingredients:
– 400g tin of chickpeas (drained)
– 1/2 cup almond meal
– 2 Pastured eggs {get yours from our Marketplace here!}
– 1 tsp baking powder
– 1 tsp vanilla paste
– 3 tbsp maple syrup
– 1/2 cup blueberries (or you could use chopped apple, chocolate chips or
other berries!)
– Shredded coconut (optional)
Method:
1. Preheat oven to 180°C
2. Blend all ingredients (except blueberries and coconut) together until
smooth.
3. Fold in blueberries or filling of choice.
4. Pour into a lined lo/f tin. Scatter over more berries and coconut.
Bake in oven for 20-25 minutes until set.
