Full of flavour, and with just the right amount of spice. We took the "bulk it up" advice and added some diced pumpkin and a handful of black beans left over from another meal, which went really well. We rinsed the quinoa before cooking, though, as that's what we're used to.

Loved this recipe. Flavoursome and the La Vera brand of haloumi was PERFECT with this. Probably our favourite meal yet!
