This is one of the tastiest meals we have ever had from DT! Love it! Though we made one small change, we used a full cube of stock for the two person recipe rather than half a cube, which I feel was 100% necessary for comfort food levels of flavour/salt.
We're normally not super into the vegan nut cheeses, but melting this one into the risotto means you get all of the flavour and none of the odd texture. The combination of the salty risotto with the refreshing gentle flavour of the roasted tomato and the crisp freshness of the snap peas was sublime. This heavily pregnant woman thanks you for creating a meal that was easy on all of my senses!
