Sticky BBQ Drumettes

Sticky BBQ Drumettes - Sticky chicken drumettes marinated in homestyle BBQ sauce, served with a veggie packed baked rice.
1. Set oven to 250°C. Combine 2 tbsp honey, 1 tbsp tomato paste, 2 tbsp Worcestershire sauce, 2 crushed garlic cloves and 2 tbsp oil. Toss with chicken to coat.

2. Spread drumettes on a large, lined baking tray. Cook in the oven for 25 minutes, or until sticky and cooked through. Turn 2-3 times during cooking.

3. Rinse and slice leek. Cut kernels off corn cob, dice capsicum and tomato. Grate carrot and chop broccoli.

4. Heat an ovenproof frypan (see notes) with 1 tbsp oil over medium-high heat. Add prepared vegetables and sauté for 5-7 minutes, or until softened. Stir in 1 tbsp tomato paste and 1 1/2 tsp oregano.

5. Rinse and add rice and 1/2 cup water to pan. Season to taste with salt and pepper. Top with grated parmesan cheese and bake in the oven for 15 minutes.



6. Serve chicken drumettes with baked vegetable rice, sprinkle with chopped parsley and spoon over any sauces to serve.


Tip!
Transfer vegetables and rice to a baking dish if you don’t have a large ovenproof frypan.
