A healthy twist on the classic American Sloppy Joe sandwich! Spiced meat sauce, veggie ribbons, cucumber yoghurt and crispy red cabbage in warm Turkish bread.

1. Dice onion and zucchini. Heat a large frypan with 1 tbsp oil over medium-high heat. Add mince and cook for 2-3 minutes, breaking up lumps with a wooden spoon. Add zucchini and onion, cook for a further 3 minutes.
2. Stir in 2-3 tsp garam masala (to taste) and cook for 1-2 minutes, or until fragrant. Stir in 3 tbsp tomato paste, 1 cup water and 1 stock cube. Simmer for 5-10 minutes (uncovered).
3. Grate 1/3 cucumber and squeeze with your hands to remove excess liquid. Combine with yoghurt and crushed garlic, season with salt and pepper.
4. Cut 4 large square bread pieces. Halve and toast (optional).
5. Toss cabbage with 1 tbsp olive oil, 1/2 tbsp vinegar, salt and pepper.
Peel remaining cucumber and carrots into ribbons.
6. Adjust seasoning of the meat (if needed). Assemble your sloppy joe sandwich with a layer of cucumber yoghurt, veggie ribbons, meat sauce, cabbage and more cucumber yoghurt to taste.
Notes:
Grate the zucchini if preferred. If you don’t have garam masala, try using a cajun or Mexican spice mix instead.
