Sausage coil with roast veggies & feta cream

Beef herb & garlic sausage coil served with cumin roasted veggies, sourdough rolls and feta cream from Naked food co.
1. Set oven to 250ºC (see notes). Wedge onion and chop zucchini. Place on a lined tray with cherry tomatoes and diced pumpkin. Toss with 2 tsp cumin seeds, oil, salt and pepper. Roast in the upper part of the oven for 18 minutes.

2. Heat a large pan with oil over medium-high heat (see notes). Add sausage and cook for 6-7 minutes on each side or until cooked through.

3. Slice the bread rolls and warm in the oven for 3-4 minutes.

4. Serve sausage with roast veggies, bread and feta cream.

NOTES
Don’t wait for the oven to preheat fully, we are using high heat and count on the oven not reaching the set temperature until halfway through the cook. If you have a slow oven, simply extend the cook time with 5 minutes or so.
Cook sausage on the barbecue if you can! Otherwise a frypan, or in the oven works well too!
No beef option - beef sausage coil is replaced with 600g chicken sausages.
