Simple and healthy one tray dinner with salmon fillets, herbed baby potatoes, broccolini and dill sauce. Accompanied by a side salad.

1. Set oven to 220ÂșC.
Halve potatoes and toss on a lined oven tray with 1 tbsp oil, 1 tsp oregano, salt and pepper (see notes). Roast in the oven for 15 minutes.
2. Finely chop dill and spring onion. Combine in a bowl with yoghurt, 1-2 tbsp mayonnaise (optional) and juice from 1/2 lemon (use to taste). Season with salt and pepper to taste.
3. Rub salmon fillets with oil, salt and pepper. Add to tray and top with thinly sliced lemon. Roast for a further 10 minutes.
4. Chop lettuce, slice cucumber and apple. Toss in a serving bowl with 1 tbsp olive oil, salt and pepper.
5. Trim broccolini and add to a frypan with 1 tbsp oil / butter, 2 tbsp water, salt and pepper. Cover and steam for 3 minutes. Add to the salmon tray to serve.
6. Chop and scatter parsley over the tray. Serve at the table accompanied with side salad and sauce. Cut any remaining lemon into wedges to squeeze over.
Notes:
Add broccolini to tray bake for the last 5 minutes if you prefer.
