Spiced pork steaks served with smokey baked beans and a simple side salad.
1. Roughly chop capsicums and halve cherry tomatoes. Toss together with butter beans (drained), baked beans, 1 tsp smoked paprika and 2 tbsp olive oil. Season with salt and pepper, bake for 15 minutes (see notes).
2. Trim, rinse and wedge lettuce, slice avocado (see notes). Place in a bowl, drizzle with olive oil and take to the table.
3. Rub pork steaks with 1 tsp cumin, 1 tsp smoked paprika, oil, salt and pepper.
4. Heat a large grill pan over high heat. Add steaks to pan and cook for 3 minutes on each side or until cooked through. Wedge and add red onion to char.
5. Serve pork steaks and charred onion at the table with smokey beans and side salad.
NOTES
Add red onion to tray bake if you prefer.
Mash avocado with some oil or yoghurt if you like, for a quick guacamole!
