Peanut patties with lime dressing
1. Place rice in a saucepan, cover with x 1.5 amount of water. Cover with a lid, cook on low heat for 10-15 minutes. Remove from heat, stand for 5 minutes.
2. Combine patty ingredients well. Set aside to rest for 5-10 minutes.
3. Whisk to combine or blend dressing ingredients using a stick mixer. Season to taste, set aside in fridge.
4. Trim broccolini and cut into thirds. Trim and halve snow peas, slice spring onions, chilli and garlic. Heat a large pan with 1 tbsp oil over medium heat. Cook chilli and garlic for 1 minute, add vegetables and toss for 2-3 minutes. Season & set aside and keep warm.
5. Add oil to pan, spoon in 1/4 cup measures of patty mixture and flatten with a spatula. Cook for 2-3 minutes on each side, or until golden. Repeat with remaining mixture.
6. Serve peanut patties with rice and vegetables, spoon over dressing to taste.
Tip!
Use another nut butter or a legume if allergic to peanuts.
