Was worried about baking fish this way and my concerns were justified. Tough, rubbery fish. The DT fish fishes that use parcels for baking fare much better and retain moisture and result in melt in your mouth flesh. Also not convinced that white fish and Parmesan should hang out together…was a bit jarring for me.
