Mixed rice, sweet potato halloumi
1. Set oven to 220°C.

2. Dice sweet potatoes into 2cm pieces. Toss with oil, salt and pepper on a lined oven tray. Roast for 20 minutes, or until tender and golden.

3. Place rice in a saucepan, cover with plenty of water. Simmer for 20 minutes, or until tender. Drain and rinse (see tip!).

4. Combine dressing ingredients in a bowl, season to taste with salt and pepper. Thinly slice celery, spring onions and radishes, chop coriander.

5. Slice halloumi. Heat a pan with oil over medium-high heat. Cook halloumi for 1 minute on each side, or until golden.

6. Gently toss rice with dressing, prepared vegetables and cranberries. Serve topped with halloumi slices.

Rinse cooked rice in hot water to keep warm.
600g sweet potatoes
1 tbsp oil, for cooking

200g mixed rice

3 tbsp olive oil
1/2 lemon, juice
1 garlic clove, crushed
1 tsp chilli flakes

2 celery sticks
1/4 bunch spring onions
1/3 bunch radishes
1/3 bunch coriander

1 packet halloumi cheese
1 tbsp oil, for cooking
40g dried cranberries

salt and pepper, for seasoning
