Nice and creamy, we loved the flavour! I would suggest to simmer the chicken for a bit first then add coconut milk a bit later. I simmered the coconut milk with the chicken as per the instructions and felt the coconut milk almost split.
Adding roasted peanut would lift the flavour to an even higher level and give the dish an extra texture.
There was enough for another portion. I had the leftovers for lunch the next day, yummo!
