Lamb koftas, chopped salad & homemade hummus

Middle Eastern style lamb koftas served with lebanese flatbreads, homemade hummus and crispy chopped salad.

No lamb option - replacement is beef mince.



Gluten friendly option - bread is replaced with GF wraps.
1. Set oven to 250°C, grill. 
Drain chickpeas, blend with 1 crushed garlic clove, juice from 1/2 lemon, 1/2 tsp cumin and 2 tbsp olive oil to form a smooth consistency, using a stick mixer or processor. Season with salt and pepper to taste.

2. Combine lamb mince with 1/4 finely chopped red onion, 1 tsp oregano, 1 crushed garlic clove, salt and pepper. Form koftas using oiled hands (see notes).

3. Place koftas on a lined oven tray and cook in the upper part of the oven for 10 minutes, turning halfway through cooking.

4. Chop cucumber (deseed if desired), tomatoes, capsicum, lettuce and remaining red onion. Toss in a bowl with 1 tbsp olive oil, 1 tbsp lemon juice, salt and pepper.

5. Wrap the breads in foil and warm in the oven for 3-4 minutes.

6. Serve lamb koftas with chopped salad, warm breads and hummus.

Notes:
Thread koftas onto skewers if you desire! If using wooden skewers, soak before cooking in the oven, alternatively thread onto skewers after cooking.
