soy sauce, 2 tbsp sesame oil and 1 1/2 tbsp honey.
2. Halve and toss chicken thigh fillets with nut mix and half of the sauce in a lined oven dish. Slice and scatter over spring onions (see notes). Grill in the oven for 15-20 minutes or until cooked through.
3. Dice avocado, slice capsicum and apple. Toss in a bowl with cabbage and remaining dressing (see notes).
4. Serve honey soy chicken with spring onions and nuts alongside red cabbage slaw (see notes).
Grill the marinated chicken on the barbecue (leave thigh fillets whole) if preferred. You can then toast the nuts in a frypan with 1 tbsp brown sugar and a little oil and add the spring onions to the slaw.
If you prefer you can sprinkle the spring onions on the chicken after cooking alternatively add to the slaw.
Serve dressing on the side if preferred.
Cook and serve some rice on the side for the kids if you like!
