HERBIE BURGERS

Herbie beef burgers
1. Set oven to 180°C. Place red onion, vinegar and 1 tsp salt in a bowl and set aside for serving (see tip!)

2. Slice bocconcini and zucchini into rounds (1/2 cm). Toss with lemon zest, oil and oregano. Set aside.

3. Combine herbie mayonnaise ingredients. Toss half the mayonnaise with coleslaw mix, season to taste. Set remainder mayonnaise aside for serving.

4. Cook zucchini (reserve bocconcini) in a large pan for 1-2 minute. Add burgers, cook for 3-4 minutes on each side, or until cooked to your liking.

5. Place burgers on a lined oven tray, top with bocconcini. Bake for 2 minutes, or until cheese is slightly melted. Sprinkle top of buns with water and sesame seeds, place buns in the oven to heat through. Slice tomatoes, drain balsamic onion.

6. Assemble burgers with relish, vegetables, beef patty, balsamic onion and mayonnaise. Serve with coleslaw.

Tip!
Instead of pickling, cook red onion in a pan with oil or butter until caramelised.

1/4 cup balsamic vinegar

1 lemon
1/2 tub bocconcini
1/2 zucchini
1 tbsp oil, for cooking
1 tsp dried oregano

1/2 cup mayonnaise
1 tsp dijon mustard, optional
1/2 packet basil, chopped
1/4 bunch chives, chopped

1/2 bag coleslaw mix

6 beef hamburger patties
6 wholemeal buns
1/2 packet sesame seeds
2 tomatoes
1/2 jar capsicum relish

salt and pepper, for seasoning
