Absolutely loved this! My partner and I kept saying: “Oh my god, this is delicious!” Simple technique, heaps of veggies, and lovely flavour and texture. Fresh but generous and comforting. Will make again! Only change was a little splash of wine to deglaze after toasting the rice.
