GREEK PIZZAS

Greek Lamb Pizzas
1. Set oven to 220°C.

2. Dice beetroots into 1cm cubes, toss with oil on a lined tray. Bake for 10-15 minutes, or until just tender.

3. Thinly slice tomatoes, courgettes and shallots. Spread pizza bases with sauce and divide vegetables, including beetroot, between pizzas. Season with dried oregano and top with crumbled feta cheese.

4. Bake pizzas for 8-10 minutes, or until golden.

5. Heat a pan over high heat. Rub lamb steaks with oregano, salt, pepper and oil. Sear in pan for 2 minutes on each side, or until cooked to your liking. Set aside on a chopping board, slice when cool enough to handle.

6. Prepare side salad.

7. Serve pizzas topped with sliced lamb steaks. Serve with side salad.

Tip!
Grate courgettes and stir through tomato sauce to “hide” them!
Serve lamb steak fingers on the side instead.
2 beetroots

4 spelt pizza bases
1 jar tomato sauce
1 tsp dried oregano
1/2 packet feta cheese

300g lamb steaks
1/2 tsp dried oregano
1 tbsp oil, for cooking

side salad
1/2 cucumber, peeled into ribbons
1 punnet cherry tomatoes, halved
1/3 packet celery sticks, sliced
125g sugar snaps, sliced
1/2 packet feta cheese, crumbled
1 baby cos lettuce, rinsed and torn

salt and pepper, for seasoning
