The caremlised onion and the melted cheese make these great burgers! If the recipe calls for two pans, it'd make more sense to move step 3 to after step 4 or step 5 (warm the buns simultaneously) so their still warm by the time they are served. I opted to use one pan and gave the pan a quick wipe after caramelising the onion...in hindsight, I probably lost some flavour with that wipe though.
