A classic chicken caesar salad tossed with spelt pasta, crispy bacon and finished with sliced avocado.
No pork option - bacon is replaced with turkey.

1. Boil the pasta
Bring a saucepan of water to the boil. Add pasta and cook according to packet instructions or until cooked al dente. Drain and rinse in cold water.
2. Cook the bacon
Heat a large frypan with oil over high heat. Dice zucchini and add to pan with bacon. Cook for 5 minutes or until bacon is crispy. Transfer to a large bowl and keep pan over medium-high heat.
3. Cook the chicken
Rub chicken with oil and 2 tsp paprika. Add to pan and cook for 3-4 minutes on each side or until cooked through.
4. Prepare fresh ingredients
In the meantime, trim and slice lettuce and celery, dice tomatoes. Add to the bowl with bacon (see notes).
5. Toss it all together
Add pasta, aioli and parmesan cheese and toss all together. Season to taste with salt and pepper.
6. Finish and plate
Arrange on a serving platter and top with sliced avocado and chicken tenderloins.
Notes
Shred and add chicken to step 4 if you prefer!
Alternatively, toss pasta with aioli and parmesan cheese. Keep all other ingredients separate for everyone to assemble their own dish at the table.
