Beef with satay noodles
1. Marinate beef in garlic, lime zest, soy sauce and oil.
2. Cook rice noodles for 4-5 minutes in boiling water until just tender. Drain, rinse and set aside
3. Blend sauce ingredients with 1/4 cup hot water until smooth, using a stick mixer or processor (see tip!).
4. Heat a large pan or wok over high heat. Add beef and cook for 4-5 minutes, or until well browned. Set aside on a plate and squeeze over juice from 1/2 lime. Cut remaining lime into wedges for serving, reserve pan.
5. Cut capsicums into sticks, thinly slice zucchini and shred wombok. Heat the pan again with more oil over high heat. Slice spring onions and carrot, add to the pan and cook for 2 minutes. Add remaining vegetables, cook for 3-4 minutes, or until just tender.
6. Stir in satay sauce along with noodles. Gently toss to combine. Serve satay noodles topped with beef, almonds and with lime wedges on the side.
Tip!
Alternatively, warm sauce ingredients in a small saucepan and whisk until combined.
Toast almonds in a dry pan, if desired.
